There are two main processes involved: condensation and dissolution.
The hot coffee produces water vapor (steam). When this vapor rises and touches the cooler cotton candy, it condenses into tiny liquid droplets.
Cotton candy is made of very fine strands of sugar with a large surface area. When the condensed water contacts it, the sugar dissolves quickly, causing the structure to collapse and fall into the coffee like raindrops😊😊😊
