I recommend GrapheneOS.  I've been using it for years now and I absolutely love it.

Then Pixel 4, then 5, then finally 7a which is what I am using now.

You really want to choose a Pixel that will last a few years.  Migrating is a real PITA since backups of a pixel with multiple profiles on GrapheneOS is nearly impossible.
