We explained many times, but we will add it to the FAQ section. For now e-mail is not used at all. You can put anything you want there as long as it has an email format. It is intended to use in the future if for some reason the LN address will no longer work. E-Mail would be the only way to notify a user about this and the fact that he is missing some free sats.
